~ Curried Chicken Salad ~
Serves 1 to 2
Ingredients:
4 oz precooked chicken breast, diced (find organic chicken!)
½ green apple, diced
2 T green onion, chopped
2T celery, diced
1T dried cranberries or raisins
5 almonds, chopped or 2 T pistachios
2 T Greek nonfat yogurt, plain
1 T curry powder
1 lemon, juiced & zested
1 t sea salt
12 endive leaves or 2 c spring mix or 1 whole wheat pita
Method:
In a bowl, toss chicken, apples, green onion, celery, raisins or cranberries, almonds or pistachios, Greek yogurt, curry powder, lemon juice and zest, and sea salt. Serve on endive leaves or a bed of lettuces or in a wheat pita pocket.
