
{with gorgonzola, shaved pecorino, and mushrooms!}
Method: Preheat oven to 425 degrees. Saute a sliced white onion, chopped fresh garlic and 2 to 4 T. of olive oil for 2 minutes, then deglaze the pan with 1/2 c. of your favorite white wine. Add a basket's worth of sliced mushrooms (brown or white), sea salt & pepper (to your taste). Lay on pizza dough (homemade or prepared is fine!), add 1/2 c. of crumbled gorgonzola and 1/2 c. of shaved pecorino. Bake until bubbly! Serve with Champagne!
