
Chicken soup with potato gnocchi
A twist on classic Chicken noodle soup and chicken & dumplings
Ingredients
Whole chicken
Celery, onion, & carrots (1 each)
Fresh herbs (rosemary, thyme, parley-finely chopped, to taste)
Potato gnocchi (1 pound)
Salt & pepper

Method
Put everything (except gnocchi) in a large pot and cover with water. Bring to a boil for 5-10 minutes, cover and let sit for one hour. Remove chicken and meat should fall off the bone. Remove skin, fat , & bones and put meat back in soup pot. Bring back to boil, and then simmer, add in potato gnocchi. Check package for cooking time on pasta. Should only be 4-5 minutes, if fresh.
Serve or put in refrigerator to cool.
Pasta with Peas & Prosciutto
Ingredients
Small shell pasta (1 pound)
1/2 yellow onion, diced
Cut up prosciutto or ham (2 cups)
Frozen or fresh peas, snap peas or Edamame (1 cup or sub in broccoli &/or cauliflower)
Olive oil, salt and pepper (to taste)
Parmesan cheese (1/4 cup)
Method
Cook pasta, set aside Saute onion until caramelized, add ham , season Add in pasta, peas, 1/2 cream, stir Remove from heat, stir in parmesan cheese
Sushi wraps
Ingredients
Cooked rice (1 cup) and nori sheets (2-3) (or Annie Chun's Sushi wraps)
Bay shrimp (1 cup) & avocado (1/2) (or tuna or salmon)
Soy sauce (to taste)

Method
Lay out nori sheets and press rice onto 1/2 of the sheet. On top of the rice, lay down shrimp & avocado (or any ingredients you wish!). Roll up and cut into 6 slices. Serve!

Oh my - those recipes look so easy, but more importantly so tasty! Can't wait to try the gnochi soup this weekend! Looking forward to even more ideas on this blog!
Being that (over the past 15 years) I've been living on Lisa' cooking & fabulous recipes - I can't wait to try these simple recipes.
Also, rumor has it there's going to be a cookbook? When is it coming out?
